From our humble beginnings in a horse-drawn trailer to today, we’ve been sharing moments and creating memories with you. Everyone has a story at Louis’. A last-minute dinner plan after a long day, a poutine shared on the corner of a table with your besties, or a quick serving of fries while you're waiting for the bus.

And then there are those little traditions we keep up without us even thinking about it. You always sit in the same booth, you always ask for “all dressed with ketchup,” and you always feel that comforting sense of coming home.

Over the decades, we have grown and stayed true to our values. Times change, fashions come and go, but some things just stay the same. In Louis’ restaurants, we celebrate the simplicity of a good meal and the taste of real food. 

We welcome you with genuine smiles in a squeaky-clean environment. It comes naturally – we’re proud to welcome you in our restaurants.  Our meals are always top quality, made with fresh, local ingredients. Our house fries are made from potatoes that are prepared with care daily. 

Our meat is always fresh, never frozen, and sourced from local suppliers. Our classic aprons are a symbol of our commitment and pride. There are an infinite number of restaurants out there. At Louis’, it’s different… It’s not just your appetite that keeps you coming back, it’s your heart.  

Today, just like yesterday, we continue with same passion and commitment to offer what always been our strength – authentic food and that little something extra that makes us so much more than a restaurant.

The story began in the 1940s, when Louis Balawyder, a Saskatchewan businessman, settled in Sherbrooke. He had a simple idea: to serve good food, quickly, and with heart. From his horse-drawn trailer to the motorized canteen parked near the terminus, he wrote the first pages of a story that, decades later, we continue to write with you.
The small snack bar near the Aylmer bridge quickly became a local hotspot. It became a must-stop – a habit that stuck.
In 1970, Yvon Ellyson acquired the restaurant. This defining moment propelled Louis’ Luncheonette to the rank of Sherbrooke institution. Yvon’s sons, Pierre, Jean and Jacques, followed in his footsteps and have carried on the tradition with the same passion.
Louis’ grew along with the city. From a simple snack bar, the story kept unfolding...

It’s a new chapter with the Cassar family. After being in the Ellyson family for over 50 years, the Louis’ restaurants were bought by two brothers, Peter and Matthew, well-known Sherbrooke businessmen. With them, the passion lives on and the story continues.
Today, Louis’ is part of the landscape. It is a tradition that keeps being shared. And the future is promising! Soon, the family will expand again with a new address in Rock Forest.
